Famous for his huevos rancheros, French toast, organic quiches, hearty soups, and the BALT— a bacon, avocado, lettuce and tomato sandwich on whole wheat bread with bean sprouts and spicy jalapeño mayonnaise, chef/owner Jeff Consaga established the Foundry Café with the aim of creating a local dining experience that is soulful and organic, while remaining affordable. “The Foundry” is now a Cold Spring community fixture for families, commuters, hikers and frequent visitors. This eclectic eatery has huge appeal to the vegetarian and the carnivore alike. Let friendly and boisterous server Sharon treat you to a bottomless cup of coffee alongside some of our favorite fare in the village. Folky, coffee house music fills the air, local art decorates the walls, and the true Cold Spring vibe permeates the atmosphere. For many, including us, this is home. Open for breakfast and lunch until 3pm, Foundry Café is child-friendly, and has limited dog-friendly sidewalk seating.
